I use a program called Total Recorder, from http://highcriteria.com
The "Professional Version" is relatively inexpensive and offers frequent
no-charge upgrades. It is very flexible, works well, offers many options for
sound quality, file format, splits files at prescribed time, file size, or other
intervals, and will automatically start and stop at preset times.
I have been using it for several years now.
