On a three finger bluegrass roll you use the thumb, index finger, and
middle finger on the three strings that you're rolling. When you're
double-thumbing a roll, you would use the thumb on string 1, thumb again on
string 2, and the index finger on string 3. It takes a bit of practice.
It's the hard way to get the approximate same effect. It's an "old school"
technique, and I'm not surprised that you're unfamiliar with it.
