The H2/H4 will create a new file anytime that you start recording. Any time
that you stop the recording it finishes that recording and writes it to disk
as it's own file with a numbered name. You can then rename it from the
recorder but it's kind of a pain without a keyboard. When you start
recording again it does remember all of the last settings that you used and
will start a new .wav or .mp3 file for you automatically. If you are
recording mult-track using the advanced 4 (+) track features it will save a
file for each track that is laid down.
The recording quality is pretty darned amazing especially on full quality
.wav format and it is extremely convenient being able to record directly to
an mp3 that you can then email without having to do any conversion on first.
The built in condenser mics are really impressive on the H4 (and probably
the H2 as well) and keep in mind that you can plug a pair of studio quality
mics directly into the unit's phantom powered XLR jacks (H4 only) for top
level stereo recording.
Being able to set it up on a camera tripod is a really nice touch too. I
actually use mine on one of these quite a bit.

This is a wonderful little creature that will let you hang the recorder on
about anything! Even works somewhat for cameras too.

During recording, can one set up separate files on the SD card or does one
have a continuous recording stream?
If you stop recording, does it set up a separate file. I have an Archos but
it is difficult to set up seperate files during recording.
Is the recording as good as they say?
