Basically, there are two ways of applying color to a guitar: dyes or stains in
the wood, and toners in the finish.  The guy who does my guitars only applies
color in the finish, not in the wood.  These methods let the grain pattern and
figure of the wood show through.

As Eugene said, there were and are many colors used.  There was a "classic"
color patterns used in the 30s, and many Dobros had this.  It was a kind of dark
yellow or pumpkin color in the center, and dark almost black around the outside. 
I have a 1939 Kalamazoo arch top guitar I have occasionally asked my guy to
match.  He uses antique maple or honey maple toner for the center, VanDyke brown
with black added for the darker nearly opaque color around the outside.

Obviously, if the wood has much color of its own (think walnut or mahogany),
this color shows through stains, dyes and toners.  Here, opaque colors must be
used to cover naturally colored wood.  Which begs the question, why use these
more expensive woods if you are going to cover them up?  Light colored woods like
maple and birch laminate do well with toners and stains.
