Dan,

Thought I'd add one or two cents to the pot.  You could ask the owner of the
watering hole if you could have some "non-compete" vendors like a music
store/record shop, jewelry and T-shirt people, etc.  They provide a diversion and
some extra income to the effort.

As both an audience member and performer at several festivals, I could offer a
few suggestions.  If you have access to a covered pavilion, put everyone under
it.  If not, provide a large tent for shade and/or shelter for the audience, but
place it 70 or 80 feet away from the stage, so folks who want both sun and music
can sit in front of the stage.  

Place the stage high enough so the inconsiderate ones who stick an umbrella or
stand up and dance in front of the stage won't block the view of others farther
back.

Provide enough plastic potties near enough to the audience areas so lines don't
have to form.

If rains create swill holes, have a big tractor on hand to haul out large
campers that might get mired down coming or going.

If you are going to have overnight campers, scatter a few plastic potties
throughout the camping areas so all night jammers (and tenters) have a convenient
place to go.

For the bands, you should have a plastic potty near the stage area.  The bands
also need a picnic canopy or fly back stage to get under as they wait their turn
to play, and to keep their instrument cases dry and out of the sun.  Tables to
unload/store instrument cases on are also nice for the bands.  The Brandon VT
festival is about as nice as it gets for both players (including reso players)
and listeners, with what I'm sure is a modest budget.

You will need 15 or more acres of fairly flat campable land if you expect to
grow in coming years.
